We've definitely gotten into the Beyond meats and various clones. I won't do the Impossible stuff because of the genetically modified soy components and some testing that indicates presence of glyphosate. So we're sticking with Beyond and some other brands that use pea and fava beans as the protein.
I have gotten to the point where I prefer a Beyond burger over a regular burger. Yes I have been know to add some bacon at times. But my wife is a pescatarian and avoiding meat is better for the planet. We've also been regularly using the ground Beyond with taco seasoning for tacos and nachos. The Beyond sausage is also quite good in regular and spicy versions. We do brat style hoagies with peppers and onions or we break it up and use it in pastas or on pizza. I'm interested in checking out the pea protein based tuna and chicken that is carried in the new market nearby. I can't quite give up bacon, BBQ brisket or tri-tip just yet. But I have reduced beef consumption from several times a week to a couple of times a month.

Speaking of a budget, I bought a Walmart thin crust supreme for $2.25 and covered the top with Walmart pepperonis and mozzarella and it was really good.
