I have a question for our Asian forumites. Let's say you were born in January, before the lunar new year. Am I correct in assuming that you're considered to be born in the year of whatever was the year prior? In other words, if 2020 was the year of the rat, and 2021 the year of the ox, if you were born in January if this year, you would say you were born in the year of the rat?

I fall into this category. You must determine it through the Lunar New Gear Calendar.

When I was younger, I had some teachers tell me I was the Year Of The Horse because they are using the Western calendar. I am a snake using the Lunar calendar.

Cool! Then I'm a dragon instead of a snake.
