hypothetically speaking, if you think that you get more channels than you pay for, would you call the cable company or not?
what would you do?

Man, I'm torn on this one. Part of me says "yes" but part of me says if I call and they do anything with my account, I'll never even end up with the channels I paid for. Whenever they change anything, the mess everything up and it's nearly impossible to get it right again.

Hell no!
They'd probably turn all your channels off. Then they'd turn them on and your cable modem would be flakey.

if i remember correctly, your comcast box will see "everything" for the first 24 hours or so
use your DVR a lot over the next few hours, record a bunch of movies you want to see and save them for later...

Unless you're getting premium channels that you know would cost extra, I wouldn't worry about it. In other words, If you're paying for bottom-of-the-line basic cable, you may be getting some next tier channels because it isn't worth it for them to block them for just you. In that case, I'd say don't worry about it.
If you're getting HBO, Showtime, etc. and you don't want them, make sure they know you don't want them, and make sure you get the name of the person you spoke to and note the date and time of the your request. Otherwise you may get a surprise bill when they realize you've been getting them without paying for them.

It's hard to know what you should have. Just watch and enjoy.

I'd give it some time to see if the channels go away (like, maybe 5 years or so).

They do that on purpose so you'll get addicted to the extra channels. Then when they cut off those extra channels in six months or so you'll be so used to getting thems that you'll pony up the money for the expanded package. This has happened to me three separate times (in three separate states), so I don't think it is a mistake.
