If I switch web hosting companies

Am I going to lose all of my emails? I am copying everything from my current FTP site but can't recognize if I am collecting my emails as well. How can I see that? What should I look for?

it really depends on your current host. Usually, your emails are going to be located in a higher directory than your "www" or "public_html" folder, but I can see my "mail" directory on several of my websites.

Are you using Mail, Entourage, or some other desktop mail client? There are ways to do the transition that way (take old account offline, create new account, copy all messages to new account, etc), but it all just depends on how you're setup.

Your new host may have some tips for you, and some hosts even help make sure that your new site is setup correctly.
