I just received an email from TeamViewer and they've added remote support of iOS devices. It isn't perfect. I still can't see the screen remotely in realtime, but I can see near instant screenshots, device stats, logs and processes. I can also configure email and wifi settings remotely (assuming of course that the device currently has a sufficient cellular data connection). It isn't perfect, but will certainly help me quite a bit.
