I learned a little more. She's not opening a restaurant; she's taking over some of the work from the owner who is now too old to handle it. They're splitting up the work and expenses and "profit" without any buy-in, lease, or change of ownership. The owner was not able to sell it so this is her next-best option. So I probably have a short window to get my hands on that chicken fried steak and gravy.

I looked up Scrapple on Wikipedia and read a little.
Other than contents, how does Scrapple differ from Spam, once on the plate?
On my first visit to Costco after COVID controls were in force, there were few canned meat (and other) products on the shelves.
A few people were grabbing up packs of tins of Spam.
I was a kid the last time I had it, and it was OK.
I don't know if the taste holds up for me after all these years.

I also had to look up the Scrapple description, while I'd heard of it, it was never a thing in the area of New England I'm originally from.

Scrapple doesn't have the same texture as SPAM it has a lot of corn meal in it as well as "everything but the oink"... Scrapple is sliced in slabs, and then pan fried until brown and crispy. It's delicious! If you don't fry it until crispy, the texture is more of a "mush", and pretty unappetizing!
