Smoked Pork Belly

Family asked me to another brisket. So I decided to put a pork belly on the side.

Salt, Pepper, little cayenne.

Smoked it 3 hours, rotating every hour to avoid buring the hotter side.

Took it in, split in half.

One half cubed, covered a hot sauce honey and bbq combo, Put back on grille to cook and soften a little more.

Cubed the other half and let cook a little more.

Big success.

Put some leftover plain cubes in a cast iron pan this morning, heated up, chopped with a spatula. Poured a couple off eggs over it. Flipped and added some jalapeƱo jack cheese. Had a great omelette!

Have not tried pork belly burnt ends with a honey hot sauce. I usually some variation S-P-G while smoking, then butter, Bbq sauce and a Bbq dry rub after cubed to become burnt ends. I have switched out the BBQ for Stonewall Kitchen Apple Grilling Sauce and added honey, as my wife prefers a sweeter taste.
