Easy diabetic pumpkin dessert

I am eating with a nursing home resident who is diabetic. I winged this dessert but there probably is a recipe somewhere....



1 can Pumpkin (15 oz NOT the pie filling kind)
1 carton sugar free Frozen Dream whip thawed
1 pkg sugar free instant vanilla pudding
Pumpkin pie spice to suit taste. (2-3 tsp)
1 Cup skim milk

Make Pudding with 1 cup skim milk. Stir in Pumpkin, spice. Then stir in Dream whip. Put in dishes and refrigerate.

Oh, that pecan nut pie crust sure looks good!!! I might have to try that in place of a graham cracker crust for one of my favorite "cheesecake" pies. Thanks! Smile

Every year for more years than I can remember I always made a pumpkin chiffon pie with a praline crust. At xmas I made an Irish coffee chiffon with choc crust.

I'm gonna make me a cheesecake just so I can try that crust. Any thoughts on a flavor of cheesecake to harmonize with the nut crust? I want the crust's flavor to still stand out. I may toast the pecans as well.
