I've been reasonably satisfied with Sprint--1500 minutes (250 anytime) for $35. But I only use about 40 minutes a month, so I want to switch to prepaid. I can't find prepaid with number portability and reasonable coverage in the boonies (basically, I need either analog roaming or Verizon's network).

I can match that. Up until a month ago, I had 2300 minutes, 2 lines, everything you list above, for $99/month.
I moved from Cingular Blue to Cingular Orange in order to change plans, because my needs changed. I hated to give up that deal, but I just didn't need it. I moved on with my life.

for travel, it's been hard to be Vzw, though cust service is sometimes lacking. I suspect the others are no better. Sell you a phone, connect you and see ya later.
I have a LG VX7000 which I like but I want to get the Moto e815. EVDO for those airports w/o wifi and the need to check email. iSyncs easily with iCal, ADB, etc. VG camera, which has come in handy for me on occasion.
cons: whip ant, terrible weak vibrate (I hate audible ringers).
