I have had very good luck (knock on wood) with 2GB Crucial RAM:

Before netbooks became popular, these were regularly $18 a piece, but still a good price considering. As far as speed increase, it is not night/day, like going from an G3 iMac to a C2Duo iMac, but things open and close faster and there is less lag.
For under $340 you can have a fairly capable Mini 10" Mac (assuming that you have a family pack of 10.5 or 10.6).
