Love, love, love Nobu. My suggestion is tell the wait person what you don't like and just have them start bringing out stuff. They aren't big fans of wasabi and soy sauce, BTW. 
Have also had a fantastic dinner at Jean Joho's Eiffel Tower Restaurant at Paris. It is at the top of the tower and be sure to ask for a window table that faces the fountains at Bellagio.
I haven't been there, but friends of mine raved about one of the restaurants at Wynn. Unfortunately, I don't know which one!
