Actually now that I understand how to manipulate the files through deckeda's explanation, I kind of like the flexibility of being able to move the files around. If Apple would take this one step further and allow the user to create their own categories, then one could have their own customized categorization system.
As an FYI, I noticed that if you do change the categories from, say, Movies to Home Videos, iTunes actually moves the original media files from iTunes:iTunes Music:Movies to iTunes:iTunes Music:Home Videos. It's not just a metafile change.
