Yes, there are studies that show no difference between using and not using gloves. But that assumes the workers clean their hands after handling non-food items and duties. If they do not change the gloves, same problem. So it is more a case that gloves are sometimes used to maintain the appearance of sanitary practices, than any necessity to use them. A restuarant that maintains sanitary procedures will be good whether or not they use gloves. One that does not will do any better with gloves.
