Could you use an HDMI model and add a HDMI to composite adapter? They are very inexpensive. I think this is the one I use,

I'm afraid I don't know anything about blue ray players but I am very curious about the 5.1 audio discs you are using and the stereo equipment you are using. It must be a very high end system I assume.
My own system is very modest but adequate for me. I have a two channel system as I want to keep things simple. Accuphase vintage amplifier and magnepan speakers. ![]()

I've got a Samsung BD-D5700 bluray player hooked to my 14 year old Sony.
I think it does what you want, but I don't know if you can still buy them.

I have an older Panasonic (DMP-BD60) that has a video out (yellow RCA) and optical audio out.
